Day 1 of the Food in Pictures week. Three meals and a snack. Check out yesterday's post for all the details on the this week's blog theme as well as the great Comments conversation!

Meals

Breakfast: Slice of leftover beef, carrots, olive spread, clementine, prep time – 3:06
Lunch: Brussels sprouts, leftover chicken, bag of dried apples, prep time including slicing brussels for baking – 6:20
Snack: brussels sprouts and chicken, prep time to put in tupperware – :21 seconds
Dinner: Spinach salad with sauteed  onions, olive oil dressing, and a hamburger patty, prep time to cook hamburger, slice onions, make salad – 11:35

TOTAL TIME: Minus the time the brussels sprouts were in the over cooking (35 minutes) my total prep time yesterday was 21 minutes 22 seconds.  Not bad.

Breakfast, lunch, and snack yesterday had to be go-to, get the job done meals.  After being away for the weekend and getting home at 9:30 Sunday night, Monday morning had to be quick and easy for the busy day ahead.  It was super doable thanks to Eric’s weekend grocery store trip.  Lots of tupperware meals.  The Mrs. May’s freeze dried fruits are a great resource on the go.  I get them at Costco.

Here’s how I cook my brussels sprouts for those interested.  I’m obsessed with brussels sprouts.
– Preheat oven to 375
– Slice 1-2 bags of brussels sprouts in half, remove stalk along the way
– Toss with salt, pepper, bacon grease
– Bake on cookie sheet for 35 minutes, tossing occasionally  
– Broil for the last 2-3 minutes to crisp tops

    i love brussel sprouts too!! i add some garlic and/or shallots to the roasting pan and they get all carmelized and delicious- you should try it.
