Grapefruit on Steroids

Check out the difference between this conventional grapefruit (left) and the organic grapefruit (right). The conventional grapefruit is obviously on steroids.     oh, and a couple of people asked for the recipe for those kid-friendly flax-seed chicken fingers:

    Ingredients

    * 4 skinless, boneless chicken breasts
    * 2 tbsp. (30 mL) coconut oil
    * 1 cup (250 mL) ground flax seed meal (can be found at most natural food stores and is also at Costco now, too)
    * 1 tbsp. paprika
    * 1 tbsp. garlic powder
    * 1 tbsp. onion powder
    * sea salt to taste (i generally taste the “breading” mixture as i go to make sure the proportions are to my liking)

    Cooking Instructions

    1. Preheat the oven to 400°F (200°C). Grease a baking sheet with the coconut oil to prevent fingers from sticking.
    2. Cut each of the chicken breasts into 4 or 5 lengthwise “fingers.” (or you can buy chicken breast tenderloins to save time). set aside.
    3. Place all dry ingredients in a bowl and mix well.
    4. Take each chicken finger and coat with “breading” mixture. Flax seed meal generally clings to the chicken without any need for a binder like egg or flour, so the “breading” should stick on there pretty well 🙂
    5. Place each finger on your greased baking sheet and bake in the oven at 400°F for 10 min. Then turn over fingers to the other side and bake for an additional 5-6 min.
