I’m going through the challenge solo, and one of my biggest keys is to mute the TV and avert my eyes during food ads. Out of sight, out of mind, and stay focused on my goal. Buying healthy in the grocery store is the easy part; finding the resolve not to call out for something when I’m tired, don’t want to cook, and crave something delicious is the hard part.
We (Shane and Nicole) are meeting Erik Fredrickson at the UMC on campus tomorrow (Thursday). We’re betting lunch that we can find him a WTF Challenge Level 9 certified meal at the UMC cafeteria. If you’re on campus, feel free to join us at 1:45!
Caps.. I still watch food network..no problem becauuuuse paleo or “wtf paleo” can still be delish!!! I made some DANK grass fed meatballs last night .. Ill post the recipe later! 🙂 plus no need to crave the food in ads because I bet its fake haha.. Formaldahyde and clay doesn’t sound gooood!

Nicole, I have a meeting at 1 but I think I can get there by 1:45. At the UMC I do spinach, two hardboiled eggs (not pastured, surely), cucumbers, tomatoes, mushrooms, carrots, oil and vinegar, with some strawberries or an apple on the side. I don’t recommend the sliced deli meat they provide for the salads; it tastes bad and the taste permeates the whole salad! Maybe get a few pieces to try, but don’t go hog wild =)
Not bad Caps, but I can eat two eggs in my sleep. We’ll see what we can make happen…

Paleo WTF MeatBALLIN’
I modified a recipe I found on crossfit santa cruz so dont give me too much credit:
So I’ll explain meat part first, then sauce..
You’ll need:
~2.5-3 lbs of grassfed beef (unless you are below level 7 of course.. in that case you could go to whole foods and do half pork chorizo or breakfast sausage and half beef for little bit more flavor)
– 3 eggs
– 1/2 yellow onion chopped fine
– 2 celery stalks chopped
– 2 T parsley (fresh or dried is fine too)
– 1-2 T italian seasonings or just do a little oregano/basil mix
-1 teaspoon black pepper (i threw in some cayenne for a little kick too)
– Throw in a dash of thyme and rosemary too just for kicks if you have it
Mix together, by hand, and form 2 inch diameter balls and place in a baking dish (set aside).
Preheat oven @ 350 F
THEN: Sauce:
you’ll need
-2 large Heirloom tomatoes (peel them if you want- i like the skins cuz I’m weird- but dice up to add to sauce)
– 1 can of tomato paste (salt free is available)
– 1 can diced tomatoes (no salt also exists) or dice some regular tomatoes like I did!
– 1/2 yellow onion (use the other half from the meatball)
– 1/2 cup red wine
– Some grassfed butter
– 3 cloves garlic chopped (doesnt have to be extremely small, just trying to get the flavor)
Heat the butter up on medium heat in a medium sized saucepan(don’t need too much, just about a Tablespoon or so). Once the butter starts to melt, add onion and garlics into the pan. After the onions have become transluscent, add the rest of the ingredients and bring to a simmer.
Take the sauce and pour it over the meatballs, bake for 45 mins in your 350 oven! You can obviously scale back the recipe if you can’t deal with that many leftovers but hey.. its a preemtive strike against cooking the next few days OR feeds a large family!
BTW I ate mine with cauliflower ‘rice’, as the original recipe suggested, which is super easy and really good with it: Just take a head of cauliflower, throw it in the food processor until it turns into a rice consistancy. Don’t overdo it though because it will be weird. Then put it in a microwave bowl and COVER, do NOT add water, and microwave for 5 minutes on 50% power!

okay- so i just went searching for something to help me with my gum-addiction and found some “tea tree toothpicks” made by Tea Tree Therapy. good stuff – no sugar, just natural extracts! Found them at Sprouts, but i’m sure they are available elsewhere.
HA- i just read the label on the back, and it states that “their long-lasting flavor can be an aid to those giving up smoking” well, in this case, those giving up gum and chocolate! 🙂
Shane, I don’t believe you. If you wake up tomorrow with two hardboiled eggs in your mouth, then I’ll know for sure you can’t.

We just added Wednesdays at 9am to the schedule beginning next week. So now there’s M, W, and Thursday at 9am on the schedule. WORD.
