Missing your pasta already? Spaghetti squash to the rescue! Here’s James’ recipe for:
Spaghetti Squash with Meatballs and Marinara
Ingredients List:
1 spaghetti squash
1 jar of marinara without added non-paleo crap
1 lb lean ground beef
2 tsp Italian seasoning
1 tsp olive oil
1/4 cup water
Squash
1. Preheat oven to 350*
2. Split the squash in half lengthwise and clean out all the seeds and stringy stuff
3. Place the halves face down on a baking sheet and pour the water onto the sheet
4. Bake at 350 for 45 min until tender
5. Let them cool a little. With a fork, scrape out spaghetti squash (it will come out stringy all on its own!)
Meatballs
1. Mix the meat, olive oil, and seasoning in a bowl
2. Cook the meatballs in a pan until the center is fully done or bake at 350 for 15-20 minutes
Heat the marinara and pour the sauce and meatballs on the squash

We had this for dinner tonight — it was awesome! I think that spaghetti squash passes quite nicely for an angel hair pasta!
