Veggies help you lift heavy things. So do friends.

Day 9 (to be completed January 10th, 11th, 12th, and 13th)
Eat a green vegetable with TWO meals everyday for the remaining four days.
This can be challenging if you’re not a vegetable fan, especially the green ones!  So what are we looking at here?  Spinach, kale, chard, arugula, broccoli, green bell pepper, jalapeno, brussel sprouts, bok choy, etc.
Here a few tricks I do to get in extra green veggies relatively easily.

  • keep a container of lettuce/spinach blend in your fridge (traditionally used for making salads) so you can toss in a couple of handfuls as your breakfast is almost done cooking and sautee them right into your meal.
  • serve one of your meals on a bed of arugula
  • make Curried Cream of Broccoli Soup and keep it in the fridge
  • baked broccoli or brussel sprouts or a combo of the two can be really tasty when tossed in coconut oil or lard, mixed in with some sliced onion and maybe even bacon!

Post your findings to comments!

Well…I’ve got the food part down, burpees and wine not so much. I fold. 8 days was my max for this one. Sticking to no sugar and zoned meals. Here’s my dinner inspiration for you all 🙂

We love delicata but can’t find it anywhere now…suggestions? (I did find the paleo bacon at ideal this morning, yay!)

I was just telling my sister-in-law how much better I feel when I eat greens during breakfast. Egg drop soup with chunks of broccoli is my all time fav. Now I have motivation to make sure I include my veggies, which sometimes I struggle with in the winter. Thanks!

Green veggies are the norm for me and we have at least one with dinner but fun to work it in for the rest of the crew at other times of the day. This morning I made a spinach and egg scramble with paleo bacon.

Got this one covered. Chalk it up to my obsessive meal planning. I love green veggies and eat them at every meal.

Done–bed of arugula under two poached eggs and salsa for breakfast then pot roast with wilted arugula and carrots for dinner. Still have zucchini, broccoli and more arugula on tap to use for the next few days. Greens are easy for me, but I can’t eat kale, spinach or chard (kidney stones!) so I have to be choosy.

Whole foods is selling broccoli with giant stalks. It turns out those stalks are excellent in smoothies. Ask Kim Price, I made her try ours this morning.
